3 cloves garlic, minced and mashed
1 tsp. dried or 1 Tbsp. of fresh Thyme leaves
½ tsp. black pepper or more to taste
1-2 tsp. coarse sea salt
2 Tbsp. olive oil
1 Bottom round roast (about 3 lbs.)
Preheat oven to 425 degree F. Meanwhile, create a rub by mashing together minced garlic, thyme, salt and pepper in a mortar and pestle; combine with olive oil and massage into meat. Set aside and bring to room temperature (about 20 minutes). Roast in the hot oven for 10 minutes, then reduce heat to 300 and cook for another 30-40 minutes. For rare beef, cook to an internal temp of 120-130 degrees. Let rest for 10-20 minutes under aluminum foil before serving.
