These are the cut sheets for finishing your order. When you’ve completed your order with Wind Ranch please fill out the appropriate cut sheet and return it to us to make sure it is in the queue. There are many ways to cut a beef with new names constantly evolving.The system we use and reference is the North American Meat Processors Association (NAMP) which has approximatly 119 cuts not including offal (liver, heart, sweetbreads, kidneys, tongue, etc). Add in the Australian Beef User Guide, the Canadian Beef Grading Agency (CBGA), British, Argentinian, Brazilian, French, Korean, etc and one has a staggering variety of possible cuts. We have simplified these as much as possible but still allow you the ability to have a custom cut on your meats.
