Quick & Easy Sausage and Peppers
Serves 4

4 Windy N Ranch beef sausage links or pork bratwurst links (approx. 1 lb)
2 Tbsp. olive or safflower oil
1 small yellow onion, sliced thin
2-3 cloves garlic, minced
2-3 bell peppers (we use a mix of red, yellow and green), sliced thin lengthwise
1 can diced tomatoes
1/2 to 1 cup cilantro, roughly chopped
Brown links in a heavy skillet, cooking on medium-low heat until thoroughly cooked. Add a little water, if necessary, to avoid burning. Remove sausages from skillet and set aside. Using the same skillet, heat 2 tablespoons of oil over medium heat. Add the onions and garlic; sauté, stirring occasionally, until the onions are opaque, about 5 minutes. Add the peppers and continue to sauté, stirring occasionally, until the peppers are cooked to your liking. Meanwhile, slice the sausage into 1/4 inch thick rounds. Return sausage to skillet, add the diced tomatoes, cilantro, salt and pepper to taste, and simmer over medium low for another 5-10 minutes until the tomatoes cook down some. Serve over rice or in a hoagie roll with melty cheese.
